Based on the analysis of the EU law and the jurisprudence of the Court of Justice, the essay examines the protection of the European food consumer. The author firstly investigates the content and extent of the food information provided to consumers looking closely to the informative-asymmetric paradigm that has characterized the business-to-consumer relations. Then this issue is analysed vis-à-vis the increasing relevance of the right to adequate information and the way this latter one has altered the responsibility of the market operators. As a matter of fact there is a need for a balance of the freedom of expression and economic initiative on the one hand and the fundamental right to information on the other hand.
